Garlic Roasted Potatoes
Ingredients
- Small red or white potatoes, cut in halves or quarters (3 pounds)
- olive oil (1/4 cup)
- kosher salt (1 1/2 teaspoons)
- ground black pepper (1 teaspoon)
- cloves garlic, peeled, minced (6)
- fresh minced parsley (2 tablespoons)

Instructions
Step 1
1. Preheat oven to 400 °F.
Step 2
2. In a large bowl, add the potatoes, olive oil, salt, pepper, and garlic and toss to coat.
Step 3
3. Transfer the pan to the oven and cook uncovered for 45 minutes to 1 hour, or until potatoes are browned and crisp. Make sure to toss the potatoes every 20 minutes to ensure even cooking.
Step 4
4. When cooking is complete, remove potatoes from oven and toss with parsley and salt. Serve hot.
