Ingredients

  • old-fashioned oats (4 cups)
  • raw nuts (pecans, walnuts, sliced almonds, etc.) (1 1/2 cups)
  • unsweetened coconut flakes
  • kosher salt (1 teaspoon)
  • ground cinnamon (1 teaspoon)
  • coconut oil, melted (1/2 cup)
  • honey (1/2 cup)
  • vanilla extract (1 teaspoon)
  • fruit pulp (apple, orange, pineapple, or berry) (1/2 cup)

Utensils needed

  • Large Bowl
  • Parchment Paper
  • Rubber Spatula

Instructions

Step 1
1. Preheat oven to 350⁰ and line a baking sheet with parchment paper.

Step 2
2. In a large bowl, combine oats, nuts, coconut flakes, salt, and cinnamon.

Step 3
3. Add the coconut oil, honey, vanilla extract, and fruit pulp to the oat mixture and stir until evenly coated. Pour the mixture onto the prepared pan and use a spatula to spread it in an even layer.

Step 4
4. Place baking sheet in the oven and bake for 25 to 30 minutes or until golden brown, stirring halfway through cooking.

Step 5
5. Let granola cool completely before serving—it will crisp up as it cools.

6. Store granola in an airtight container at room temperature up to 2 weeks.
