Ingredients
- gluten-free steel-cut oats (2 cups)
- water (3 3/4 cups)
- apple cider vinegar (1/4 cup)
- ground cinnamon (1 tablespoon)
- ground nutmeg (1/2 teaspoon)
- vanilla extract (1/2 teaspoon)
- dried cranberries, plus more for garnish (1/2 cup)
- apples peeled, cored, and diced (2)
- sea salt (1/8 teaspoon)
- Maple syrup, for topping
Instructions
Step 1
1. Add the oats, water, vinegar, cinnamon, nutmeg, vanilla, cranberries, apples, and salt to the pot. Assemble the Pressure Lid, making sure the pressure release valve is in the SEAL position. Select Pressure and set to High. Set the time to 11 minutes. Select START / STOP to begin.
Step 2
2. When pressure cooking is complete, allow the pressure to naturally release for 10 minutes, then quick release any remaining pressure by moving the pressure release valve to the VENT position. Carefully remove the lid when the pressure has finished releasing.
Step 3
3. Stir the oatmeal and serve immediately. Top with maple syrup and more dried cranberries, as desired.
