Mediterranean Roasted Cauliflower
Ingredients
- canola oil (3 tablespoons)
- extra-virgin olive oil (2 tablespoons)
- garlic paste or minced garlic (1 tablespoon)
- dried oregano (1 teaspoon)
- ground cumin (½ teaspoon)
- paprika (1 teaspoon)
- Juice of half a lemon
- harissa paste (optional) (½ teaspoon)
- Kosher salt, as desired
- Ground black pepper, as desired
- cauliflower, trimmed (2 heads)

Instructions
Step 1
1. Install the Accessory Frame in the bottom level of the unit. Turn dial to select SPECIALTY ROAST, set STAGE 1 temperature to 550 °F, and set time to 10 minutes. Push the right-hand dial to set STAGE 2, then set temperature to 350 °F, and set time to 20 minutes. Select START/STOP to begin preheating (preheating will take approx. 20 minutes).
Step 2
2. In a small bowl, whisk together all ingredients except for the cauliflower. Evenly cover the cauliflower heads with the prepared mixture. Place the Roast Rack in the Pro-Heat Pan, then place the cauliflower heads on the rack.
Step 3
3. When unit is preheated and ADD FOOD and PRS STRT is displayed, open door and place the Pro-Heat Pan on the rack. Close door and cook until cauliflower heads are soft inside. Depending on the size of the heads, this could be between 10 to 20 minutes into STAGE 2 cooking.
Step 4
4. When cooking is complete, open door, remove cauliflower and let rest for about 5 minutes before slicing.
